(Egg)Bite Me!


Easy, breezy, you can even make it cheesy! These bite sized treats pack a lot of flavor and nutrients, and take a lot less time to make than watching an episode of "Stranger Things". Make it a snack to get you between meals, or a healthy side dish to lunch or dinner.


I used 3 sets of ingredients to make these egg bites: 1. bacon and broccoli; 2. chicken sausage, spinach and mushrooms; 3. onions, bell pepper and tomatoes.


I started by frying 2 thick strips of bacon on a non-stick pan. Once crispy, I removed them from the pan and set aside on a paper towel-lined plate. Then I sauteed the spinach, mushroom and sausages (pre-cooked and cut into small bits) in the left over bacon oil until the spinach were mostly wilted. Meanwhile, I steamed a 1/2 cup of broccoli florets and diced 1/4 cup each of onion, green bell pepper and Roma tomatoes, and cut the bacon into smaller pieces once they cooled. When the spinach are wilted, transfer together to another bowl and toss the onion, peppers and tomatoes into the pan (add oil if needed), season with cumin if you want a more fajita flavor. Once done (about 4mins), transfer to another bowl and you're ready to load up the muffin tray!


Preheat your oven to 350* F and whisk 10 large eggs, adding 2 Tbs of milk and some salt and pepper. Make sure to grease your muffin pan (I used Pam baking spray) before putting in the ingredients, leaving enough room to pour or ladle in the egg. Once your oven has reached 350* place the muffin pan on the middle rack and set your timer for 15mins, checking about halfway through to see if the temperature is holding (the egg bites will rise too high and burn if the oven temp is too hot). Once done, set the tray aside and allow to cool. Use a plastic fork or spatula to gently lift the egg bites out of the pan. Enjoy now, or store in a plastic container for later!
